I am firm believer that a hot meal in winter can really lift the spirits after a long day. Whether it gives you the energy for a little late excercise (not straight after), a kick up the but to do that piece of housework you’ve been putting off, or that winding down feeling, a decent hot meal is a cosy end to a cold day!
Try my slightly spicy chunky soup recipe below! Full of veggies and really easy to make! Remember you can add other veggies to include your fav’s!
Ingredients
- 2 Tbsp Oil
- 2 Leeks
- 1 Large Red Onion
- 1/2 a Bunch of Spring Onions
- 1 Chilli
- 2 Swede
- 6 Carrots
- Baby Potatoes
- 3 Garlic Cloves
- 2 Tsp Mixed Herbs
- 3 Tbsp medium Curry Powder
- 2 Tbsp Soy Sauce
- 2 Cups of Vegetable Stock
Or my favourite way….
- 2 Sachet’s of “Graces”Cock Soup (Caribbean soup mix) Dilute according to packet instructions.
Method
1. Heat oil in a large pot
2. Simply chop all vegetables to the size you prefer (I like it chunky)
3. Throw all veggie ingredients into pot and fry up for about 5 mins until onions are softening.
4. Add curry powder and Mixed herbs and stir
5. Continue to let the veggies fry up for another 5 mins, stirring occasionally to avoid sticking, 6. Add Stock or Cock Soup sachets mix well…add water if necessary
7. Add soy sauce
8. Bring to the boil, then let simmer on a low heat for about 1 – 1.5 hours. Or until all vegetables are tender.
9. Add salt (if you must) /pepper to taste.
Enjoy with a Crusty Wholemeal Bread Roll……Delicious!
